The co-owners of The Cheese Shop in Chapel Hill-Carrboro, North Carolina and Glasshalfull’s ownership team will celebrate the opening of Chapel-Hill-Carrboro’s dedicated cut-to-order cheese shop inside the wine bar’s retail shop (106 S. Greensboro Street, Carrboro, NC 27510). The noteworthy opening signifies the only cut-to-order cheese shop in the Triangle area.

Named one of the most anticipated openings of 2023 by Eater Carolinas, The Cheese Shop will take over about 100 square feet of space inside Glasshalfull’s wine shop to accommodate a sprawling cheese case full of small batch, farmstead and artisanal cheeses from local, domestic and imported producers, as well as charcuterie, butter, specialty pantry goods and provisions. The shop will be open three days a week, Thurs-Fri, 12-7pm and Sat, 11am-6pm.

Founded by husband-and-wife team, Michelle and Stevie Webb in February of 2022, The Cheese Shop began as a pop-up to initially test and refine their cut-to-order concept. Part retail shop and part food truck without wheels, the two were a weekly fixture at Pluck Farm Farmer’s Market in Mebane, NC, ran an ecommerce and cheese board operation out of Redstart Foods in Durham, NC, and continue to partner with local businesses to drive growth.
